This simple somen noodle has been handed down for about 250 years and is rooted in Handa Town, Tokushima Prefecture. Made by careful hand-stretching, the noodles are thick and very chewy, so they can be enjoyed cold or in hot dishes such as nyumen, with a chewy texture. Try it cold as somen in the summer, or hot as nyumen in the winter.
