Most mass-produced sesame oil is made by roasting sesame seeds and then quickly squeezing them with high pressure from a machine in a short time, which can easily result in burnt parts, and since the burnt smell is removed and sesame flavoring is used, the original sesame scent is not present. Tamajime squeezing is a traditional squeezing method that began in the mid-Edo period and continues to this day, in which sesame seeds are slowly squeezed with a large granite stone and filtered through Japanese paper.
The Japanese paper used is produced in Saitama Prefecture and the water is filtered slowly over a long period of time.
