Sakura shrimp are harvested twice a year, in spring and autumn, in Yui, Shizuoka Prefecture. Sakura shrimp are a symbol of spring in Japan, and newspapers are filled with articles about them every spring when they are harvested. They are beautiful shrimp with a cherry blossom color. They are delicious in stir-fries and tempura, but we recommend using them with buckwheat flour and in galettes. They also go great with cheese.
