Yaginao has been fascinated by the rich flavor of Rausu, and has been carefully selecting Rausu kelp and aging it for over two years before delivering it to restaurants in Nihonbashi and Ginza that have been long-time fans of Rausu. Rausu is the northernmost location where drift ice can be seen in the Sea of Okhotsk. Rausu kelp is made using the bounty of the Sea of Okhotsk and a process that requires over 60 steps by skilled craftsmen. Yaginao matures this kelp for several years before delivering it to customers.
